This soup has a ton of great healing properties for the body! Everything from amino acids that help heal the intestinal lining and reduce inflammation, collagen, protein, rich fats that help the body burn fat to pre-biotics that feed the beneficial bacteria in you intestines. I highly recommend making your own bone broth for the most nutrient dense and delicious both possible.
Chicken and Vegetable Soup
2 Shredded chicken breasts or meat from 1 whole chicken
2 T Avocado oil
1 Onion (diced)
6 Carrots (peeled and diced)
1 Parsnip (peeled and diced)
3 Celery stalks (sliced lengthwise)
1 C Riced cauliflower
1.5 C Green cabbage (shredded)
2 Bay leaves
2 Garlic cloves (minced)
2 t Ground sage
1 t Thyme
3-4 Quarts chicken bone broth
Sea salt (to taste)
Pepper (to taste)
Add avocado oil to a large soup pot over medium heat.
Add onions, carrots, parsnip, celery, garlic, and bay leaves to the pot.
Sauté veggies until onions become translucent and carrots begin to soften.
Add chicken, broth, riced cauliflower, cabbage, and seasonings.
Cover and simmer 20-35 minutes or until vegetables are cooked to desired texture.
* This soup freezes well so you can easily make a large batch and store the extras in the freezer for an easy quick meal later on.
